Bette Lemke's Muffins
Pour ½ cup of boiling water over ½ cup raisins and set aside to cool.
Mix:
1 cup whole wheat flour
2 ¼ cups oat bran
1 Tablespoon baking powder
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. cinnamon or nutmeg
Beat:
3 egg whites
1 cup skim milk
¼ cup applesauce
Stir the wet ingredients into the dry. Add raisins and enough water to make batter of desired consistency. Stir until just moistened and bake batter for 20 minutes at 350 degrees. Make 12 medium muffins.
Note: Thick batter will make chewy muffins while thin batter will make cake-like muffins.
Options: Use whole eggs if you want to energize your children. Sunflower seeds, nuts, chopped apricots or carob chips may also be substituted in the batter.
