Date and Nut Loaf
Combine and cook, stirring constantly until thickened:
¾ c. water
1½ c. chopped dates
Mix together:
2 c. organic flour
3 tsp. baking powder
Stir in:
½ c. chopped nuts (walnuts or pecans)
In a small bowl beat together 1 egg, 1 c. milk (or soy or rice milk), ¼ c. oil Add date mixture and liquids to flour/baking powder mixture. Mix well with a wooden spoon. Pour into a greased loaf pan. Bake at 350 F. for 60 to 70 minutes.
