Party Rice

1 onion, chopped
½ c. raisins
1/3 c. peanuts, raw or roasted, unsalted
½c. sunflower seeds
3 T. olive oil
½ t. allspice
1 t. sea salt
1 T. butter or coconut oil
3 c. cooked rice –short or long brown, white jasmine or basmati (white or brown)

In large heavy pan sauté onion, raisins, peanuts and sunflower seeds together in the oil. Stir occasionally and keep cover on pan between stirrings. When onion is transparent, remove from heat. Stir in allspice, sea salt and butter or coconut oil. When butter/oil is melted, add cooked rice. Stir well and return to heat, covered, for about 5 minutes so rice can become warm. Serve immediately. Enjoy! It is not necessary to measure anything after you make it once or twice.
