Saskatoon Berry Cous-Cous Cake

1½ cups apple juice (or water)
½ cup raisins
2 cups cous-cous
1 pinch sea salt

Boil apple juice with raisins and salt. Add cous-cous, cover and let steam 20 minutes (no flame!) Press cous-cous firmly in glass or ceramic pie plate or cake pan.

Topping

1 cup water
¼ cup barley malt or brown rice syrup
1 pinch sea salt
3 cups fresh or frozen Saskatoon berries
2 to 3 Tbls. kuzu, diluted in a little water (or replace kuzu with cornstarch, if necessary)

Bring water, barley malt, sea salt and berries to a boil. Turn flame to low and stir in kuzu. Simmer until clear (2 to 3 minutes), remove from heat. Pour evenly over cake. Cool before serving.
