Split Pea or Lentil Soup

Place in a soup pot:
20 cups water (more or less depending on how thick you like the finished product)
4 cups split peas (yellow or green), or lentils (red or green)
Bring to boil, cover and simmer until tender.
In a frying pan sauté the following for 10 minutes:
¼ cup coconut oil
1 cup chopped onion
2 tbsp. curry powder
2 tsp. crushed coriander
1 tsp. crushed hot red pepper
2 tbsp. mustard seed
1 tbsp. salt, more or less depending on your wishes
Add to soup pot and simmer all for 30 minutes.
This soup may be pureed or left chunky.
Stir in:
1 cup cream or coconut milk prior to serving (optional)
