Creamy Carrot Ginger Soup
9 carrots, coarsely chopped1 onion, sliced
2 inch piece of ginger, peeled and diced
1 can coconut milk
water
sea salt to taste
chopped walnuts for garnish
Put all ingredients in soup pot, with enough water to cover veggies. Bring to a boil; cover and simmer till veggies are soft. Mash in pot or blender. Serve with walnuts for garnish. 3 to 4 servings
