4 c. oatmeal (slow or 1:1 of slow and quick)
2 c. chopped almonds, walnuts and pecans (in total)
½ c. shelled unsalted pistachios
1 c. coconut (medium or ribbons)
2 t. each of cinnamon and cardamom
1 t. good salt (pink or grey, etc.)
¼ c. maple syrup or agave syrup or a combination
¼ oil (olive or avocado or your favorite)
1 c. dried cranberries

Combine all ingredients (except the cranberries) in a large bowl. Spread out in a large flat baking pan or roaster. Bake for 15 minutes at 350 F. Turn off the oven; stir the granola and return it to the warmed oven for a few hours or overnight. Sleep and awaken to a wonderful aroma and a delicious breakfast. Add the cranberries to cooled granola; stir; enjoy.
